These are the readings from my tank:

Ammonia: 0ppm
Nitrite: 1ppm
pH: 7.8

I am trying to get the Nitrite levels down by doing frequent water changes but I am not able to get it to under 1ppm. Any ideas ?

Appears your tank is cycling, haev you done any cleaning recently. If your tank was completely cycled you would have 0 ammonia and 0 nitrites. If you are positive your atnk is cycled then maybe your test kitis bad, but more than likely your tank is cycling.

Its been 2 months since I started this tank, I'm assuming its cycled as the Ammonia is absolutely zero since last 3 weeks.

Yoour tank is fully cycled if your ammonia and nitrites is zero. Right now you have enough bacteria to take care of your ammonia, however the bacteria that takes care of you nitrite is still multiplying. This is the reason for 0 ammonia and 1 ppm ( I think that is what you said your reading was) nitrite. Don't worry, it will not be long before you nitrite reads zero also, just don't add any fish right now or you might throw your tank into full cycle again. I estimate a max of 2 weeks b4 you are completely cycled. Happy fishkeeping.

A completely cycled tank has 0 ammonia,0 nitrite and some sort of nitrate reading. So plainly your tank isn't done cycleing yet.Keep up with the water changes.
