I was just wondering how to plant a banana plant in the substrate. Do you cover the actual "banana's"? Can you leave them as a floating plant or do they do better planted in the gravel?

you should leave the bananas above the soil. They photosynthesize. they hold extra nutrients for the plant and anchor it. Although the plant does survive without them.
I dropped mine in the tank where I wanted them to go, and they rooted themselves. They will keep dropping roots, too, if you move them. Once they get those first roots down, they are pretty easy to transplant.
