Help with Siphoning Colorquartz gravel.

I have a 65 gallon Malawi cichlid tank. I’ve been dealing with ammonia in my tank for 3 weeks and the ammonia is still .50 – 1. I tried changing 50% water everyday and this weekend I even added a Aqua Clear filter 70 in addition to my filstar xp3 that I have and each of them have Nitra-Zorb to try to get rid ammonia and it is not helping much.

As my gravel bed I have the Grade T colorquartz and I dunno if it is the waste and leftover food deep down the gravel. I try siphoning the gravel but not too deep. Each time I siphon the bottom gravel it sucks up all the colorquartz crystal.

Which is the best way to siphon the gravel? I need help.
 
I have the same Colorquartz and I found that if you stir it up with your fingers and keep the siphon tube about an inch from the bottom that works good as the color quartz is heavy enough that it settles right back down but any waste that is in it is alittle lighter and can be sucked right up or if the waste settles back down it will lay on the top of the quartz and again just keep the siphon up off the bottom alittle.
