So I have had the standard crawfish crawl out of a tank at certain points in my aquatic career. I was curious as to how well shrimp could crawl out. Any horror stories that're going to make me test where I step every time I get up in the middle of the night, or shouldn't I be worried?

I've never had a shrimp make a break for it. I think the reason is that crawfish will sometimes end up in ponds that dry up, and need to find a new water source. This doesn't happen to shrimp--they know that if they sit tight in their puddle, the tide will come back in and they'll be okay.
I've had a hermit ride a turbo snail all the way up before =)

I don't think shrimp can leave the water. They have virtually no body mass. Ever hold one out of the water in your hand? They almost collapse on themselves and can't move.
I found a crispy cleaner shrimp on top of my tank once. :(
Satch is correct, they pretty much just flatten out on land... Crabs are a different story though, the liitle boogers can move... I had an emerald make a run for it one day when I was moving some rocks to another tank, quite fast surprisingly hehehe Hermits are smart, they retreat into their shells where the water gets stuck, so they're easy to catch...
