To keep angles and only angels, make sure your tank is tall, minimum 16". This will let you appreciate your fish better, since an adult angel can measure 6+" from top to bottom.
A 30 gl tank is normally 36x12x16, so it fits in there. I would put 4-6 angels. If the tank goes planted with tall plants, i'd go up to 8 specimens, but it would be pushing the limits in my opinion.
pato, with those dimensions, I wouldn't go more than 3, and then as they reach maturity, one is bound to be sent back to the LFS.... if not 2 due to aggressiveness over territory and/or mating.

That's a good point. Really 4 is the number that really sticks to my mind on this question, though.
I was tempted to go with more fish because people around me tell me I keep my tanks almost empty, but it's better to have few happy fishes than a lot of overcrowded ones. Also, my mental calculation is not good when counting inches, since I was born using the metric system.
Since I've been eyeballing angelfish lately, I'll piggyback a couple of semi-relevant questions: Are angelfish aggressive towards other fish in general? Or just other angels? And are angels happy going solo? Seems like everyone talks about buying 'em in pairs.
Angelfish are cichlids, and are agressive. My two angels seem to be arguing the whole day and will eventually chase a gourami that gets in the middle of their "conversation". Also, angels will eat smaller fish like guppies or fry (not sure if their own fry, though).
As pairs, maybe it's to keep them occupied mating rather than bulling on the other fish. Not sure about this.
