It's also really important to make sure that whatever structures you have in the tank are stable. Eels can knock rock around, causing a collapse that may crush or injure them. I try to make losts of nooks and crannies near the bottom of the tank, since they tend to prefer to be able to hide all their body and just poke a head out. Using PVC is great, as long as you can verify water movement through to prevent dead spots--without it being a gush, of course! This will also help prevent them from stashing food in inaccessible places where it may rot.
