Shrimp are generally sensitive to water conditions and would probably not survive the cycling process. But their decaying bodies would produce the ammonia needed to get your cycle going, so I'd probably leave them in there if they died.

They eat anything they can find: algae, fish food, decaying matter.

You could keep them in a goldfish bowl.
