Very little plant left, help!!!

About a month ago I ordered some Hemianthus callitrichoides online. When I got it, it was great and in fact it would still be great if it weren't for my one snail. Now, I know my apple snail is a Pomacea bridgesii, the one that only eats dead plants and have been known to starve in a fully planted tank if they aren't supplemented with veggies. I have had him in a fairly heavily planted tank for months now and the only thing he eats are algae pellets and blanched veggies, he has never touched any of my other plants. For some reason he went directly for my healthy HC!!! First off, any ideas why he would go after this particular plant and not the others? And second, I have about 3 or 4 leaflets left with some root attached, do you think I will be able to recover this plant or is too far gone to save. Any tips on how to help the plant recover or should I just order more? GRRR...I am so mad at my snail...so uncharacteristic of him!! :Angel:
 
I don't have snails, but I guess it just has such itty bitty leaves, it's good for a mouthful. (I've just bought some locally, it's in quarantine, but hope mine grows nice.) As long as you have the option of ordering some more, I guess it depends upon price. If expensive, I would try recovering the old one first. If it's not a bad deal, order more and try recovering the old as well, you'll just have more quicker.

FWIW I had the same problem with my riccia. I hairnetted some to a van-shaped rock a few months ago and it had grown through quite nicely to the point where it was needing a hair but.

I moved one of my Mystery snails from my 75g to the 36g that had the riccia van and before I realized it, it ate the entire side of my van :(

Dang thing looked like a parking lot hit and run.
