Tank shuffling advice

I just got a 5G tank (with HOB filter and heater) that I am setting up tonight to move my betta into tomorrow. The betta had been living in a 1G with UGF and I am moving the plastic plant, the UGF (temporarily only) and the gravel from his 1G to the 5G. This will leave me with an empty 1G. Is there anything I can do with a 1G? Could I keep some plants and a snail in there? Just something, I hate to throw the tank away. Is there any little tiny fish that could go in there with a live plant? Help please!

I will also be emptying my 10G here shortly as I currently have 3 common goldfish in there (who will be moving over to help me cycle my new 75G while I contemplate whether to build the goldies a pond or return them), and I want to have a nice tank with probably one species of schooling fish (tetras or mollies maybe?) and a bottom feeder of some kind, so any suggestions on that one as well? I really like having the biggest school of one type of fish possible rather than 3 or 4 different kinds, I love to watch schooling fish in a big group. One again any suggestions welcome!
