are you meaning how long before they are old enough to breed, how long the actual mating ritual takes, or gestation?

Hmmmmm, depends on if you're using wheat flour or cornbread meal--and if you dip the swordtails in buttermilk before the breading substance. That step will definitely add on to your time.

Don't forget the salt and pepper and paprika always adds a nice zip to the final product.

Well, I've seen very small swords trying to breed, so I guess as soon as they are old enough to breed, they will be ready, already.
Why is it so important for you to know if I may ask? As long as you can tell a male from a female and have a ration of 1m:2f, then just maintain the aquarium properly and you will undoubtedly be greeted by success.
Don't to provide plenty of small intricate cover/hiding spots for the babies to escape the parents. You should preferable plan to remove the adults from the tank and raise the fry alone to ensure a high survival rate.
