I have a 75 gal FOWLR with sump, magnum 350 (with rowaphos and Purigen), UV, and protein skimmer. I have another magnum 350 available to me. My question is should I use it on the tank as well and what filter medium would you suggest?

Nothing. Run it empty to prevent detritus/nitrate buildup.
The other options are:
1. carbon/phosphate removal media
2. live rock rubble for a mini-refugium
3. filter floss for occasional water polishing
