My new 75 gallon tank should be here today. I'm most likely going with a Filstar XP-3 and AQ-110 HOB for filtration. This tank will be for African's so will have a lot of rock. I'd like to hide the intakes behind the rocks but am wondering if that would make for less than ideal filtration. I'm also putting in an undergravel jet system. Is it ok for my intakes to be behind rocks or should I comprimise the looks in favor of function?

Good circulation is the key.....my filters are often behind rockwork in my tanks, but I make sure there is space in the back for proper water flow, and I alternate the distance of the filter intakes from the gravel surface. It sounds like you will have a lot of water turnover and will likely have good circulation....test with a few fish flakes and see how they swirl around the tank as the sink. Keep rockwork open as much as possible to avoid dead spots. Enjoy! African cichlids are great! I have been breeding them for 25 years!
