I just completed the first stage of my cycle today. The ammonia is finally down to 0. I understand that the next stage is nitrites. My question is do I really need to get a nitirites test or can I continue with my PWC every few days and just assume that the stage will get completed since the first one has?
 
You need the test to tell you when Nitrites have spiked and reduced to zero.

You really can't assume anything during a cycle. Some people experience a stalled cycle due to PH crash, and remain stuck in the nitrite stage of the cycle permanently. You need ammonia, nitrite and even nitrate tests to be sure that all the stages of your tank's cycle are progressing as they should.
