Some do.
Products with Natu-Rose will and I believe spirulina does as well.

Some foods do....there are 3 main ways that foods do this:
1. Hormones. Seen more in imported foods as opposed to NA and European produced ones. These foods will enhance colour like crazy, but will harm the fish (and even masculinise and sterilse many fishes).
2. Artificial dyes. Using food dyes and lakes, these foods have a smallish effect on fish colouration and likely cause a fair bit of harm to the fishes' organs.
3. Natural nutrients/vitamins/amino acids. These are the foods you want. Most foods are made to primarily enhance reds and fail on the other colours. I suggest trying the New Life Spectrum line of foods...arguably the best prepared foods on the market, and their ability to enhance colour is incredible. You can see some results on FW fish here (these foods are also excellent for marine fish): http://www.cichlid-food-canada.com/gallery.html
I'd also recommend having good water condition a varried diet and keeping your fish under as little stress as possible. They will reward you if you do all this by having bright colors and long lives.
