I have to say even though I love my Angels, Discus IMO are the most vibrant and beautiful.

Although I don't have them, Pseudotropheus saulosi, Julidochromis dickfeldi, Angelfishes (Koi), German Blue Rams, Apistogramma cacatuoides... What I do/did have (and really like also): Pelvicachromis pulcher & Blood Parrot Cichlid
I really like all small cichlids, less than 6". The exceptions are the Angelfish, Blood Parrots and Discus

I like my Bolivian Rams alot since they come to the side to welcome me and are rather intelligent for fish. Although I haven't owned any of the supposedly very intelligent cichlids.

Tang - Neolamp. Gracilis
Victoria - Hap 44
West African - Chromidotilapia Guentheri
East Afr - Hemichromis elongatus
South American - Apisto Gibbiceps
Central - these are my loves, but my favorite genus would be cryptoheros!
I keep all these guys, minus the Hemichromis, I had some, but my male commited suicide and trying to force pair these fish is almost impossible *shrug*

I have always had a thing for Angels. I recently got into Oscars and I really like Electric Yellow cichlids..

This month I am mostly loving my electric blue dempseys, but I reckon for wow factor a good quality ram/ discus is hard to beat.
Also, I think the goldeneye cichlid (Nannacara anomala) is one of the most underrated cichlids around, particularly the male in breeding condition. Mine used to shine before his mate passed away.

personally i like oscars and JD's for their unique personalities,from my personal experience.
i really do like the look of mbuna tanks in general but have never kept mbunas or any malawi's etc.
i also am a convict fan as i find them very amusing (their hissy fits lol).my oscars when upset will sulk at the bottom, however the male convict i had when he got mad would act like a drunken rock star in a hotel room and trash the place lol.( rip out plants, push over deco etc.)
i have had convicts in the past and wont be getting them again.(they just plain out seem to hate every other fish).

It's a hard choice, but I'd have to say:
severums (Cichlasoma severum)
electric yellow labs (Labidochromis caeruleus)
checkerboard cichlids (Dicrossus filamentosus)
I miss my littler checkers and if I ever find more, I'm going to definately buy them!

Jack Demsey! I had a tiny JD that I had to put in a 10 gallon by himself. After living in the 10 gallon, then a 30 gallon, then a 55 gallon, he moved on to my 150 which he owned. He had great color and never bothered the other fish (unless they messed with him :) )
I still miss the little guy. :)

The Midas for sure! (the one I have is very close buddies with one of my cats LOL)
Angels and Discus tied for a very very close second.
And a really close third is the Severum.
