I know these will go with my rainbow shark but what about the tank in general? I need to know if they are suitable in my 30 gal.

Is your tank really a 30 gallon tank or a 29 gallon tank (30" long)? That makes a big difference, because length is more important than height for cichlids.
I think your other fish will be fine, but the question is how will the firemouths do in the tank. If you can get an established pair (by watching the fish at the LFS), I think it would be fine (I do worry about the gourami a bit). Otherwise - you'll need to get 4-5 and wait for them to pair up and then remove the non-paired ones. A 30" tank is kind of tight and can get rough, so keep a good eye on them until a pair forms.
A single one should do fine, BTW.
