After some time and things staying the same with little progress, I'm beginning to feel a lot of frustration. What else is there left to do? I've already got all my fish stock picked out, I've tested to the point that my nearly new API test kit is feeling quite "light" already, and I'm in the process of hand painting this bathroom to look underwater... and I'm STILL really frustrated that nothing seems to be moving forward. I know I need to be patient, and for 3 weeks just tracking my NitrIte levels was pacifying. But now what else is there to do?
 
Plan out your aquascaping? Examine plant and substrate alternatives? It's hard to be patient, but it's for the best. Your fish will appreciate a fully cycled tank in the end!

Yay! It just so happens I finally struck gold, a place 45 mins from here carries the product and is open this morning. My question is, would I go about the cycle any differently?
 
I'm cycling with ammoia.
 
Add the Bio-Spira and continue feeding the tank ammonia as you have been...when the nitrates reach 20+ ppm you should be able to stop adding ammonia, do a large water change, and then add some fish. Once the fish have been added continue to monitor the ammonia and nitrites to make sure they do not reach lethal levels.
 
New Question, possibly changing Stocking Plans - Cories?

Yesterday I visited that fish store I’d never heard of before, to get the Bio-Spira. I took a few minutes and looked at their tanks and their stock, and I have to say I was super impressed. There were no dead fish in sight, hardly any fish waste on the bottom of the tanks. I couldn’t find any specimen that didn’t look gloriously colorful and active. I even looked at the neons, and they looked very brightly colored, slightly plump. I asked him how his Neons did, and he said he hadn’t had issues with losing them, that he was very picky about the breeders he got them from. I am seriously reconsidering ordering my fish online, and buying from him instead. (Because I can save money on the shipping, the water conditions/pH maybe be more similar and result in easier acclimation, and mainly because he has a great fish store with great customer service and I feel I should support them.)

The only problem is that they don’t have snails (he says they’re not allowed to bring them into my state anymore.) He’s not sure if he has any, and it doesn’t appear that he has any Otos. He doesn't have shrimp at the moment, but might get some. So I guess I’m curious about how Cories work. How many minimum, how much do they add with the fishload? Or do these even eat algae?

What other algae eating options are out there...

It's now been 48 hours... no change, except that the pH has soared up to 7.8. No improvement in NitrAtes, (still around 5ppm, unless maybe I'm not giving it enough time to process?) And NitrItes are still high at 25 ppm.
