Ive read more than I will ever want to on cycling, and they all say to do something with the media in the filter. I have a 10g still in the box, soon to be setup....but what is the media?

mechanical or biological filters such as filter pads, ceramic rings, bioballs, etc. use to A) filter water and B) Build beneficial bacteria.
For a 10gl tank, I don't think you have to worry too much about which media to use.
