be in a 10-gal? If so, would they be ok with a dwarf gourami with them, or would that be too much?
If no to both of the above, would they work with 2 female kribs in a 20-gal?

Keeping a pair of rams in a 10g is fine, IMO. You won't be able to have the DG in there, though. Make sure to either get 2 females or 1m/1f. If you do get 1m/1f make sure there is plenty of cover for the female to hide.
 
Maybe a snail or a few shrimp. Shrimp might become a snack though, not really sure.

As far as fish goes I would say 2 rams is going to be enough.
