I know one shouldn't have 2 blue gourami's or 2 kissing gourami's because they will fight each other. But what about 2 different species like a dwarf blue and a paradise?
It depends. In a 65 gallon I have 2 dwarf blue gouramis and 1 golden. All male. The golden was there first and chased the 2 dwarfs for around an hour or so. Since, he has completely forgot them. He also chased the bolovian rams for about a day or so. Now there is no problems.

Exactly! If the tank is big enough to support more than one male gourmai and there are enough hiding places for each to declare thier territory, then you may not have many problems unless one just gets weird on you like they sometimes do. It is when the two or more male gourmais are placed in a smallish aquarium and they are running into each other where the problems will start.
