Would it be possible to keep a single convict in a community tank? I've heard they can be very aggressive, but I didn't know if this was only when they are breeding or all of the time?

If one would work, its tankmates in a 40 gallon would be a few keyhole cichlids, some corys, an SAE (I think) and an African Butterfly Fish.

Any thoughts?

provide plenty of hiding spots, and convicts are rough with plants

I would advise against it. They may be fine for a long time, but as they mature they will be killers. The only thing that might survive is the keyholes, and I wouldnt bet on that.
