If you have any of the old tank left, get a small plastic container filled with gravel from it, just sit it somewhere in your tank until u get nitrate only readings, or the old filter media will help jump start ur new tanks cycle, if not very frequent water changes until cycled

Simple enough question for the first one, what foods do angelfish tend to enjoy most, and what is most nutritional for them?

thats weird, oscars are pigs, usually eating anything that fits in their mouth, but, if the LFS u got em from spoiled em on frozen food.. it may take 2 or 3 days for em to eat wafers, pellets, sticks and/or flakes (anything dry)
hmm i think ur problem was, did u increase oxygen in the tank? add an airstone or powerhead? heat dissipates the oxygen..
heat and salt DOES cure ich and fast! but i always keep the treatment up for a minimum of 10 days after i see no spots
