how do you lower nitrates?

They are high because you have not done any water changes. Nitrate is the final "thing" in the nitrogen cycle. Ammonia gets broken down and

Start the fish at whatever temp you keep them at. You want to wrap the ice pack in a thick layer of newspaper to slow down the melt as much as possible.
