My guess would be that the filter media in the fridge had grown itself a colony of beneficial bacteria, which was converting Ammonia to Nitrates;

Also, dissolved CO2 will lower the pH of the water, maybe try taking samples of water from teh fridge and tap, leaving them out for a day and then testing, Chloring and CO2 should gas off at that point (Chloramine will not though)

Like mentioned above, if you're showing 1ppm + of ammonia, you can pretty much ignore all other parameters for now. Don't waste the drops. They're irrelevant until you have an established nitrogen cycle going on. Even with this small group of fish in a 15gal tank, you should be doing a 50% weekly water change at a minimum.

The main thing with pH is, that you tank measures the same as your tap/source water. Let a sample of tap water sit in a container over night and measure the pH of it then.
