I have three leathers: Toadstool, Sinularia and Devil's Hand. Not really sure which is which.

Do they normally open and close on a regular basis?

One in particular...I think it is the Devil's Hand...is usually quite open when the tank lights go on about noon. Then as the day goes on, it tends to close up...sometimes opening again occasionally.

Are they nocturnal? Is there any typical pattern based upon lighting?

I have a toadstool (sacrophyton) and a finger leather (sinularia), and both close at night. When I leave in the morning, the toadstool has no polyps extended, and is fully extended when I get home. The toadstool also closes whenever anybody walks on it. I wonder whether the daytime closing is because someone is walking on it or poking it. Unlike stony corals, which extend polyps at night to catch prey, softies thend to go to sleep at night.

According to Borneman's book, closing at night is a normal behavior, and is often the cause for "false alarms" among new owners.
