I'm in the process of setting up a discus tank. 75 gal tank. I was reading that you should put peat moss in your filtration system to keep the water soft and ph down. Do any of you do this. As of now there is nothing the tank, just have the filter running. Any info would be helpful.

largely depends on the Discus stock.
some may need soft water.. others will be fine in harder water.

if the stock is from a local breeder.. find out the gh/kh of their water and try to match.

often domestic raised discus are fine in most pH ranges

Largely should depend on your tap and/or tank water conditions as well as mentioned above to some degree.

I use a small bag of peat for each of my tanks and change every couple months with fresh peat, check the para's say once a month as long as they are doing ok. I am always watching and seeing how act and their skin etc. I use peat to make the ph in the water to make it more natural and avoid using to much Discus buffer.
