How long should I leave molts in the tank? My shrimp don't seem to eat them often, so they just kinda sit there until I take them out during a water change.

I never take them out, they eventually break down and get taken into the filter or get eatin, not sure but mine always go away after like a week. Because I never suck them up and eventually they disapear. I don't think they hurt anything they aren't meaty or anything so they shouldn't give off ammonia.
I don't remove molts either. Your shrimp & other inverts will eventually eat them, it's a good source of calcium replenishment for them.
That may be why they don't eat them. I made some food for them, and everyone in the tank except the snails loves it, and it has ground egg shells in it. The snails and shrimp are apparently eating any leftover shell bits, because those go away pretty quickly
I'd just leave it in. Won't hurt the water quality and is pretty important to assist shrimp with shell hardening.
Only Molt I have that last more than a day or two are the Vampire Shrimp sheds they last about a week before something eats them
