I bought a 75 gallon tank a couple days ago and I transferred all the fish/plants/filter media/gravel from the 29 gallon I previously had. Would 7 zebra danios provide enough ammonia for the bacteria to stay alive? Ive done ammonia/nitrate/nitrite readings the past 2 days and the ammonia is still 0ppm/nitrites 0ppm/nitrates 2-3ppm. Does it sound like I need to re-cycle my tank? I plan on returning the zebra danios that I was using to cycle my tank and getting african cichlids.

You are doing it right. Recheck those water parameters after 2 more days, just to be sure.

Tested the parameters today.
Ammonia- 0ppm
Nitrite-0ppm
Nitrate-6-8ppm
pH-7.6

Im looking at doing 10 yellow labs and 8 acei cichlids. Do I have to add all these fish at once or could I get 5 yellow labs and 4 acei for now then add 5 more labs and 4 more acei a couple weeks after?

It's best to add fish at once but you can add fish in batches, just don't add them one at a time.

It seems everything is OK. Add them at once. Good choice that mix of labs and aceis!

If you can add them all at once you and the fish will be better off, if not then like you said add them in half batches.. Sounds good though and like Efors said add them..
