Well its not so much they they change colors but both of them can and do sometime get very dark stripes on them. The serverum its a turquoise with a red bottom fin and hes maybe 4"-5"? Hes the largest fish in the tank and is never bothered/doesnt bother others. The stripes can come on in literally a minute and can leave just as quickly, when hes "faded" you can see very faint stripes but when he wants he almost looks like a convict with very dark, thick black stripes going vertically over his body. Why does he/she do this? I havnt found a correlation yet between it and being happy/stressed/food etc and wondering what others knew. My festivum has the same deal except the stripes arnt as bold and are almost a greenish color but run vertically as well, it may also be known that there is only 1 serverum in the tank and 2 festivums of unknown sex.
