So, I came across some articles and discussions about how Iodine maybe beneficial to shrimps, so I decided to give it a shot.
I was dosing half of what the directions instructed -- Unfortunately, Sterbai Cory are sensitive to Iodine.. . I found out the hard way.

I guess the only way to remove Iodine is to do a few water changes?

AFAIK, yes, water changes are the only way to remove iodine.

Activated carbon removes iodine/iodide very effectively. The ability to remove iodine/iodide is one of the ways that activated carbon is graded.

In what chemical form did you add the iodine/iodide to the water? Iodide is relatively harmless and a common ingredient in trace element solutions. Iodine on the other hand is toxic and not water soluble. It is the form commonly used as a disinfectant.

Oh, and iodine may be beneficial to many invertebrates, but it's much like copper in that too much (which may not actually be much) or the wrong type can be harmful, if I recall my reading correctly.
