I plan to switch my angels into my 40 breeder after they grow out, However I know the angels need low flow and I would prefer sponges but I do not know how big of sponges they make or if there are alternatives.

Yes, a sponge would be fine, and they are made for larger tanks. Here's a link to the range of Hydro sponge filters which are considered good sponge filters. I have one of these which I use in my 10g hospital tank.

In my permanent tanks I like the Hagen Elite dual sponge filter. I use this in my 20g and 30g tanks. I don't know if this has a "maximum" tank size.

The largest Hydro is rated for 125 gallons. Its size will take up a sizeable area though. I am not aware of any benefits of more filtration, beyond what will handle things for the tank size, filter and fish species and number.

you could also run multiple sponge filters in the tank.

IME, the benefit to sponge filters is for breeding and growout tanks.

the angels can handle normal filtration after they grow up. flow can be controlled in tanks with proper structures like driftwood etc.

my 75 with adult Altum has a Marineland emperor 400 as well as sunsun302 and a sponge filter..
they have no issues in the tank tho at night they prefer to hide in the driftwood tangle

Right now my baby is only the size of a quarter, everything i read said go for low flow because they do not have efficient swimming bodies

a standard filter rated for the size of your aquarium should be fine.
that said Angels like cover.. tall structures work well either tall vegetation or driftwood tangles.

if they need to get away from the flow they will seek out shelter.
