Is it normal for crayfish to like pull up the plants from the gravel in your tank?

Yes this is normal. Crayfish will uproot and eat anything they can get their claws on.

I agree with the above. If you have a planted tank only CPO and Dwarfs will leave most plants alone. I keep my crayfish well fed and they still try to catch duckweed, go figure.
