Hi,
Looking for suggestions on moving a 125gl lightly planted discus tank. Moving 1hr away.
Taking everything from the current setup that is 2yrs old.
2 canisters, some tank water, substrate, plants, drift wood, and fish.

the break down and set up time can be pretty long. the hour away move isn't a really big deal.

keep fish in a travel container . you don't really need to save the tank water but you may want to use some to transport media and deco to maintain the bacteria.

Thank you Ed,
Do we just set the tank back up and check parameters, and add the fish, or need to have it set a little?
If setting up and adding fish within 12 hrs, do we do 50% water changes for the next several day, or do we wait and let it settle?
Should we add some peetmoss or anything different?

After you set it up you should add the fish back. You want the fish in the to help maintain your beneficial bacteria.

If the water at your new location is different than your old location you may want to acclimate the fish in the same way you would if you had just brought them home from the store.

I would not do water changes unless your ammonia or nitrites get over a safe level.

It's a good idea to check out the source water parameters of the new location in case it's drastically different.

Do you have gravel or sand substrate? Sand can be a bit messier if you're moving and reusing it. That'll just require more rinsing/water changes/filter floss when you get there depending on what gets kicked up into the water

Yes, its sand, will cap with new sand if needed
Water parameters are about the same
So you guys are saying place the fish in as soon a the tank is back up, do not wait?

You may need to acclimate them to the new water, so that may or may not take some time. Are your discus pretty hardy?

This is not my tank, but the discus look in good shape and above 4 inches in size.
Is stress coat recommended when moving the fish?

You don't need stress coat but you should acclimate them. If nothing else the temperature will be different.
