What you saw is called a siphon. Go to http://www.applesnail.net/ and click on 'anatomy'. You can click on the individula parts for information - here's part of what it says about the siphon:
"The siphon is an organ consisting of a fold of the mantle cavity (nuchal lobe) at the left side of the neck above the head of the snail. When not in use, the siphon is a barely visible, but when needed, the muscles in this fold contract and the fold changes into a flexible tube-like structure, which enables the snail to breathe air while staying submerged. The siphon of an apple snail can thus be compared with a snorkel."

sorry got excited there for a bit, I had a snail one time that had that too, but I also had a situation with a snail once where there was the cluster of jelly, about a dime size, stuck to the wall of my aquarium, that had a about 10-20 "egg" like structures inside. Could those have been snail eggs, they never developed into anything, and when I tried to scrape it off, was REALLY hard!
