Because they dedicated their lives to looking at
evidence and using
reason to piece things together. The totally irrational species of doubt that you throw their way--A)"We can't know everything," and B) "something or other about a conspiracy" is so broad and devoid of foundation that it can be applied to EVERYTHING (including your own ideas). There's a chasm between smart, rational skepticism and blind ignorance of science and logic.

might be part of a governmental/scientific conspiracy to make me think my nitrite levels are high. Furthermore, the fact that my fish are all dead or dying could be caused by any number of reasons, including the influence of extra-terrestrial life!"
It's also utterly absurd, and it is very much like the things you are saying.

genuine participation in, the world around you.
