My return pump has a 3/4" threaded outlet, My question is, would it be ok for me to run the return line all in 3/4 PVC or should i expand it to 1" or 1 1/4" ?
Would that improve my flow?

i got a mag flow pump rated at 500gph if it matters.

Run the same size PVC as the outlet of the pump. So u should use 3/4". Using larger pipe won't increase the amount of water that the pump can push out. If the outlet of the pump is 3/4 than there is only so much water that can be pushed through that opening. Using the same size pipe will allow the water to flow well and with proper pressure.

The only reasons you should ever go larger on the return line is the reduce the velocity at which the water enters the tank or take back-pressure off the pump. If the outlet from the pump is 3/4" then go with that.

I'd suggest putting thick-walled plastic tubing on your elbows instead of pvc to allow for several reasons. 1) Inevitably, something goes wrong and you need to take things apart. This allows you to do it with a screw driver instead of a hacksaw. 2) the flexible bend of the tubing is less restrictive on the flow rate than even a 45 deg elbow would be. 3) the flexibility allows you to plumb in directions that you can't with hard pvc plumbing. I'm plumbing my 40 breed this way with only 1 piece of tubing from the pump to the tank. There are plastic hose clamps if you choose to plumb with tubing from your pump and it is submersible.
