Tank Switching Issue

Hi all,
I recently purchased a 55 gal for my community tank, cycled it and moved my tropical fish to it-all well and good. I then moved my two fan-tailed goldfish from their 30 gal tall to the 30 gal long that was my community tank-not well and good.
I only moved about half the water with my tropical fish to there new home so I assumed (probably wrongly) that the 30 tank would be fine for the goldies, no need to cycle. It has a Topfin 60 filter and loads of aeration, but I cant get the ammonia levels to calm down and my goldfish hide out in a hollow log decoration all the time.
I do water changes daily but by evening it is back up again. Where did I go wrong and how can I fix it?

The goldies need about 12 -15 gallons per fish for starters. and about four times the filtration that an ordinary tropical tank would need and the water needs to be super clean.

That's where my knowlege end's.

I was doing some research not too long ago about keeping orandas. My wife and I decided not to go that direction for a number of reasons. Tank size was the biggest factor.

The beneficial bacteria don't live in the water. They live in filter bio media and gravel. Did you move the filter media from the 30g tall to the 30g long?
