Anyone have a good fondue recipe??

ive been a chef for nearly ten years...the "classic" fondue that you usually come across in fine dining establishments usually consists of american,cheddar,swiss,and pepperjack(the pepperjack WILL NOT make it spicy, trust me). the other ingredient::BEER!!! use a lager like budweiser or coors(or go cheap like natural light or keystone, as the beer flavor/ alchohol will be boiled off anyway. the beer is what reacts with the cheese to give it the proper consistency, low melting point) .........you didnt specify how many people you are feeding, so ill give you amounts for about ten people. take about a sixpack of 12 ounce cans and boil it in a large pot. you want it to boil for about 5-7 min. (enough to boil all the alchohol off, youll know when you only smell the "stale beer smell" and not the strong alchohol smell)...while thats heating up and boiling, grate 1/2 pound of each cheddar,swiss,pepperjack,and american...give or take a little(if you end up with too much beer,you just let the whole mix boil/reduce untill it has the proper consitency) use equal amounts of each. now the fun part...after the beer has been boiling long enough, add the cheese and literally beat the heezy out of it. DONT STOP untill the cheese is completely melted and the mixture obtains the proper consistency. you must not stop or the cheese will not melt right and can burn to the sides of the pot(even a little burning will ruin the whole batch-it will all taste burnt)....i mean, your arm will hurt and youll be cursing me...but you really must beat it with all youve got, lol.use a heavy duty wire whisk, it will make it easyer.and thats it! serve right away or refrigerate and heat up later on low heat/double boiler(one pan inside another, the larger having some water in it....also keep it heated this way) you can adjust the amounts to what you need, you just basicly want just enough cheese/beer to make a nice thick mix. and there you have the most popular fondue recipe on the planet!! :thm:

Kids/ teenagers? Good old cheeze whiz melted works wonders. Adultys should get the good stuff.

Motzerella, and cream sherry. Or colby-jack with budweiser.

CREAMY CHEESE FONDUE

4 c. shredded American cheese
1 tbsp. flour
2 tbsp. finely chopped green pepper
1 tbsp. butter
1 1/4 c. dry white wine
6 oz. cream cheese
1 tsp. prepared mustard
Bread sticks or French bread, cubed

Toss together the cheese and flour; set aside. In a large saucepan, cook green pepper in butter until tender, but not brown. Stir in wine; heat slowly just until bubbling. Gradually add cheese, stirring constantly until smooth and bubbly. stir in cream cheese and mustard. Cook and stir over low heat until smooth. Transfer mixture to fondue pot and place over fondue burner. Serve with bread sticks or bread cubes. Serves 6.

no prob!! glad i could help!! ive cooked oriongirls recipe also...but most people who love fondue(including myself) tend to like the classic recipe more. the butter usually creates a oily layer at the top of the cheese, and the white wine and mustard take away from the flavor it is supposed to have. :dance:
