Also since I upgraded from my 10G to my 75
As soon as I put my mamba pleco into the tank, it went into hiding into
my large center media piece (Large Tree Trunk) and I haven't seen it since.
I did pick it up yesterday cause I was freaking cause I couldn't find him/her so
I noticed its spots and was relieved.

Do they only come out at night? and since it is a new tank and there is little no algie build up should I be leaving algie pellets in the tank for him/her?

completed the water change, will test water again in the a.m.

Well I did 2 25% WC's yesterday 1 in the am and 1 in the pm when I got home
and tested the water this morning at my amonia hasn't gone back to zero
its inbetween 0 and .25 ppm

my nitrite is back to 0

and my nitrate is between 10 - 20ppm

Should I just keep doing daily water changes until the amonia drops to 0?

yep do a change whenever you see ammonia or nitrite in the tank; its just the tail end of the cycle...very soon you should be stable.

sorry for asking if you have answered this already but have you checked your tap readings for ammonia, nitrite and nitrate ?
