Listen to Lupin!
It's a shame there aren't more Chinese species available in the worldwide trade; there are many beautiful cyprinids and other fishes from that country.
Several snakeheads hail from China, including Channa asiatica, C. punctata, and C. striata.
Many danios of the genus Devario come from China.
The China barb (Puntius semifasciolatus) and pool barb (P. sophore) are Chinese.
If you don't mind fudging a little, you could include Garra rufa; this is a Middle Eastern species, but similar Garra occur in China.
And of course let us not forget the Chinese algae eater, Gyrinocheilus aymonieri.
Some less commonly available loaches that occur in China:
Acanthocobitis botia - Zipper Loach
Parabotia species
Beaufortia kweichowensis - Chinese Hillstream Loach
Besides the koi and common carp (Cyprinus carpio) several other big Chinese cyprinids are available, such as silver, black, and bigeye carp; however, like the wimple that Lupin mentioned, these fish are unsuitable for home aquaria (unless you have a 2000 gallon setup like Neoprodigy's, of course).
If you do go the giant tank route, other fish such as Chinese perch (Siniperca chuatsi) become available.
I'll try to come up with some others. I am a fan of biotopes (even broadly defined ones like yours) and look forward to seeing your plans take shape.
