ok menu update

added fruit salad tropicale with fresh fruit sweet vinegar glaze
veggie supreme wrap-vegan with a twist roast red pepper garlic humis, fresh
tomato and jarlsberg cheese
egg salad wrap-pesto mayo, vegan mix, sliced egg, shred white cheese,
lemon herb & fresh spinach
buffalo chicken wrap-oven roast chicken breast, balsamic marniaded veggies,
shred white cheese, spinach & hot creme dressing

did a organic feast yesterday for the first nations college my part was a organic stew with buffalo, wild rice , carrot , potato and onions with newfoundland savour herbs with a very light take on added salt pepper or anything was charted for 250 people so was a fun monday

today tuesday oct 21 i did a sundried turkey croissant for lunch
 
menu update it would seem people dont really eat fruit salad so i dropped that

tomorrow im gonna be doing a rosefish special for lunch will post photos

also doing a catering job at the performing arts center of regina for friday an sat night the menu for friday will be organic wild rice buffalo pilaf served with ensalada mexi casa , a really nice wild blueberry cheesecake with a balsamic must fruit glaze , and two other items on the menu to be decided tomorrow
 
friday oct 24 lunch menu was pesto panseared ocean perch(rosefish) which i topped with a campari tomato artichoke compote served with a side of caesar salad for $7

i did a radichio romano bean cream soup and a smoked turkey minestroni soup

tonight im doing an informal concession set up for the regina performing arts center regina little theater one act plays

i have turkey tenders in the oven right now slow roasting with a roasted red pepper seasoning and since i have some pesto from friday im gonna use that but turn it into a tapanade of sorts to go on top as an accent as a side im gonna do a italian herbed veggie pasta salad mix

for those that dont want an entree i will do a simple chicken caesar wrap

the cheescake will be a white chocolate berry with a pecan fudge crumble topped with some dessert balsamic must and a white wine fruit glaze and whip cream of course

as a side note i find it very very very very funny that certain people in chat think im not an actual chef because i own a food outlet in a university ahhahahahhahahahhah
ill not go into it but simply smile about it
 
mmmmm balsamic vinegar and wine sauce sounds lovely im sure perfect to curdle any nice soft cheese

so tell me stez what do you know about dessert balsamic please educate me

take note of one thing in chefing the residue left over from making balsamic vinegar is very widely used in dessert application hence the name dessert balsamic must NOT balsamic vinegar

ok heading off to the catering job at the performing arts center for regina little theater a non profit amateur theatre troup whom i do concessions for as a way of helping them to raise funds

i will post pics of the turkey dish that im doing for them an the cheese cake just so that yall can have more than words to drool over
 
cant help it, you make it so easy. nuff said lmao

tho either way, as a vinegar by-product, those of us with allergies would still need an ambulence. Also im still seeing nothing other than rabbit food for those who cant eat wheat, so that would about count out my entire family from being able to eat a single thing you cook any way lol
 
oh really well im back from my function and i have pictures now ill post them after i unload and with the exception of the pasta salad and the bread you could have eaten well tonight since the turkey has no preservative, flavour enhancers such as msg etc... and the veggies were herb marniated but the pictures will suffice will post at ya in about an hour
 
ok stez since you are allergic and celiac i must say my aunt who is married to my dads brother is celiac an has cancer as well so diet for her is an issue

substitutes i use are flax, hemp, polenta, rice

im gonna post the meal as i prepared it to the reactions of people who ate it and the only thing you would not have been able to eat would be the pasta salad an the multigrain bread

even my coffee which i serve is certified organic and fair trade so that would be kosher unless caffine is an issue then that would be out but hey there is always water :P well ok the cheesecake would have an oreo crust so that would be out too

on this plate the only item that would have to be removed is the pasta for your celiac and this was a budget function where the price was $7/ plate so i can only go so far with the chefness
