Even though I thoroughly boiled my driftwood before adding it to the tank, it still changed the color of my water...should I have let it soak for a couple days before adding it to the tank, or is this just a sign to momentarily chuck out the wood?

What kind of wood? Some, like Mopani, will leach for years.

Most will leach for years. I think Spiderwood is the quickest, but either way, it's not a significant issue and no reason to discard the wood. You can do water changes to reduce the tannins, or run carbon...but honestly I'd just leave it be. Fish won't care.

I would not be too worried about the "Browning" of the water, unless it is really bad. What kind of fished are in the tank?
