If that were my tank, I'd add a single female krib. They are much prettier than the gouramis imo. But if you want to see interactions, then the gouramis might be better
I agree that a nice school of small fish is a great centerpiece for a tank, and it tends to be more appropriate for the smaller tanks.
And a nice alternative to a bristlenose is a school of otocinclus. They are adorable and low-key, and people love seeing them eat fresh fruits and veggies...
I had a school of 12 in a 29g for a couple years before moving. They weren't hard on water quality. When I moved and got a 4 foot tank, they were much more enjoyable to watch, and the dominant ones grew a little bigger. So while a 29 worked, the 60 worked much better.

Have you been consistently checking your ph and kh? A low kh can potentially lead to disaster since the nitrogen cycle tries to drop ph, and kh is your buffer to keep your ph up...
My guess is there's a hard to find sweet spot where all of the bodies are settling after they die of being transferred... probably twice within a few days. Or they're being picked apart after they die.

It's doable. It'll be hard to bring every fish... I'd just get some sponge filters seeded, little battery powered air pumps, and some plastic totes.
