Or move your cycled filter to the new tank...... it will help clear up any more nitrites present..... and simply put in back in the 20g when you need it. This is the reason I have two filters on most tanks...... lots of options!
You're almost there! Keep dosing with ammonia (only to about 2-3ppm now), monitor and WAIT for the nitrites to start to drop......(this can be a frustrating wait... I know!). Personally, I've done a 40% water change BEFORE my nitrites were at zero, and they just continued to linger at the low...
As an avid homebrewer...... I've had plenty of experience with fermentation. Get your temperature right for fermentation (72F), and you should see near instant results. Brown sugar prob wasn't the best choice, but ultimately will ferment. Corn sugar or brewers sugar is actually best....... but...
Do yourself a favor....... change out that substrate now! Old and contaminated substrate will cause all kinds of grief that you could otherwise avoid. Good lesson here for cleaning anything 'used' thats going to be put into a fishtank, from decor to substrate to filters.

Only a matter of time before betta decides he likes the taste of shrimp. Shrimp do much better (you'll see them more often) without any predators for tankmates. Even the tetras will pick at the shrimp stressing them out.

Yes to cycling it....... I've kept a 1g planted (dirt/gravel) which required water changes every two days to keep the water clear. Switched to a 2.5g reg gravel with a sponge filter planted...... I'm much happier with it.
Filtration helps..... as does a heater if the night temps get below...

Cryptocoryene will get tempermental when you move/transplant/change lighting and frequently 'melt' it's leaves away. Don't panic on that one..... it will eventually re-establish itself. If your grass has new growth..... don't worry about the old stuff dying off...trim it away as the new growth...
