I would actually say 75 is fine. A decent comprimise for those fish. Cardinals will do fine, just don't over feed them. They may be a little less active than at 80F but at 80F the other fish will be lethargic.

I always used AVG in the past but recently got rid of it. It has become as big a system resource hog as Norton or McAfee. I personally use Clamwin, but if you play around with the install a bit you can get AVG to run a little leaner (removing things like link scanner).

Perhaps your test kit isn't accurate but a 0.25 ppm of nitrite is actually quite bad. That is basically the max you would want in an uncycled tank. A properly cycled tank would measure 0 ppm of nitrite.

I too would suggest simple water changes. For now, daily, at least 20%.
