Hmm.. nitrates could be coming from your tap water. Have you tested your tap water itself?

It's going to take a while until the cycle is complete. About a month or a little longer. Just keep up with the water changes making sure ammonia hovers around 0.25-0.50 ppm. Any higher than 0.50 ppm, then do a water change to get it down. And below 1ppm for nitrite.. Gotta keep it nice and low...
