You can tell the quality of a store when you enter it. The best thing to do before buying a fish is to inspect it as well as you can, then quarantine it if possible. Check the tanks in the stores for dead or diseased fish and if something does not seem right, go elsewhere.

Sometimes I think it has to do with the personality of the fish, they just dont like it when you mess around the tank. I had some skiddish pirahna's once and I found if I covered the front of the tank with a large piece of paper so they couldnt see me in front of the tank, it helped them calm...

Try testing the water that has been sitting out for a day without anything in it. Also look for other factors besides the zebra rock which could be affecting your Ph levels to narrow down the cause and eliminate other possibilties.
