I place the unwanted marmorkrebs into a plastic container or gallon sized plastic bag with a bit of water in them and put the lot of them into the freezer for at least two days . I will use the frozen crays in the garden as fertilizer for plants.

That is not bad at all and will not interfere with the crays ability to survive. This problem will correct itself by additional moulting. I would suggest frequent water changes to stimulate the cray into a moult phase and increase the amount of calcium in your water column. One way to do this...

The crayfish is probably a Procambarus clarkii and will do great with the fish you list. Crays can be kept with almost any type of fish without problems. I think crayfish get such a bad reputation as fish killers because tHe crays will make moves that look like they are attempting to catch...
That is a pretty nice tank and also a very pretty betta! I like the look and feel of planted tanks and this is especially nice with the plant growing out of the tank to trail down and onto the table. That betta will like the security of those plants for sure!! Nicely done!!
