Yeah, Id be careful with the cherries. As for an opaline gourami IMO they are a bit big for a 10gal. Dwarfs are okay since they only get about 2inches but the "regular" gouramis get about 4inches...and I just feel thats a bit big for a 10 gallon.
As for the shrimp getting eaten...there were tons of plants (enough plants that I planted my 30 gal with them and had very few room for many more plants) and a piece of drift wood that they seemed to love to be on all the time. But I gave the gouramis to a friend who wanted something other than guppies in there tank.
