At a LFS I noticed some cute little 1/2 to 1" translucent shrimp with slightly blue grey tails. The label read "algae eating shrimp" and the guy didn't have much information about them. Does anybody know what they might be? How big they'll get? Will dwarf gouramis or weather loach murder them? IF they aren't ammano or ghost shrimp, might they be a species that will cause problems in my tank or should I feel safe with these little guys?

Are you sure they're not amano (Caridina japonica) shrimp? They eat algae.
Some d. gouramis will eat shrimp, some won't. It depends on the fish so the only way to know for sure is to try.

Most LFS have Amano shrimp in stock besides ghost or cherries. Amano shrimp can be more grey/blue, or even a tanish color also. Did they look like these "algae eating shrimp" (typical name for Amano at LFS)? If you watch the second video is has more a grey/blue color on those.
They are pretty transparent at the LFS typically because of stress from shipping, and they don't always give them the best tank mates. One of my local LFS was mixing ghost shrimp with other shrimps and I had to show them that the Ghost were killing the other shrimp!
